Red Cabbage Magic

Materials: Red cabbage, water, lemon, baking soda, vinegar
Activity: Make red cabbage juice, by pureeing cabbage and water. Fill three clear cups, half full, with cabbage juice. Add vinegar to one cup, baking soda to another cup, and lemon juice to a third cup. Watch the liquids change color.
Research Questions: What colors can you create? How is this different than mixing food coloring? If you add lemon juice to red cabbage juice, how much baking soda does it take to return the solution to the original cabbage juice color?
