Growing Root Vegetables

Materials: Sweet potatoes (glass jar, water, toothpicks) or radishes, carrots, turnips and beets (glass pie plate, water, rocks)
Activity: Stick toothpicks in a sweet potato and place it on a water-filled glass jar, so the sweet potato is partially covered in water. Cut tops off of radishes, carrots, turnips or beets. Place tops on rocks, in a glass pie plate, and partially cover with water. Watch the root vegetables sprout leaves.
Research Questions: How do the root vegetables change over time? Compare how different types of root vegetables grow.
